When I select the core-image-sato image from the drop down list, I would expect to find that is the image built, instead hob-image is what's build so we are not consistent.

That is intended to be.
I put it into the next release to fix in the future.

It can be fixed in v1.2. Dongxiao has the patch. I put it ahead.
